Fresh Lemon Bread with Lemon Glaze
Spring is the beginning of the bridal shower season. Here’s a pretty bread to add to your bridal shower menu. Of course, if you’re like me you can just make it to enjoy yourself! You’re worth it!
1/2 cup of shortening
2/3 c sugar
2 eggs
2 1/4 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup milk
2 tsp freshly greated lemon peel
1/2 cup chopped walnuts
Cream shortening, sugar and eggs until fluffly. Combine flour, baking powder, and salt. Add to creamed mixture alternatley with milk. Beat just til smooth after each addition. Stir in lemon peel and nuts.
Spoon into greased and floured loaf pan. Bake 350 degress for 1 hour or until done. Pour lemon glaze over hot bread. Let stand about 10 minutes before turning out. Cool completely before slicing.
LEMON GLAZE
1/3 cup powdered sugar
3 tbsp freshly squeezed lemon juice
Mix together until sugar is dissolved
