Using Fresh Figs – Fresh Fig Pie Recipe

Using fresh figs in recipes is as easy as using any other summer fruit. If you have never tried fresh figs, you’re in for a treat.

Fresh figs are a healthy treat and full of fiber!

Try this fresh fig pie from Cooks.com and see for yourself 

FRESH FIG PIE  

5 c. peeled figs, cut in half
1 tbsp. cornstarch
7 tbsp. sugar
Juice of 1/2 lemon
6 tbsp. butter
10 inch lattice-top pastry
1 tsp. cinnamon or apple spice
Select figs that are ripe and firm. Cut in half. Place figs in an unbaked 10 inch pastry shell.Combine cornstarch, sugar and spice; sprinkle over figs. Add lemon juice and dot with butter.Form lattice top with strips of pastry. Bake in a 425 degree oven for 30 to 40 minutes or until brown. 

My hint:  serve this warm with a scoop of your favorite vanilla ice cream on top or a piece of goat cheddar cheese on the side!

Remember, using fresh figs in a recipe is as easy as putting them in a pie shell!

Kellogg’s Recalled Cereals Include Apple Jacks and Corn Pops

Kellogg’s recalled cereals include Apple Jacks and Corn Pops along with Fruit Loops and Honey Smacks.

Working in consultation with the US Food and Drug Administration, the popular cereals are being voluntarily recalled by the Battle Creek, Michigan company because they do not meet quality standards.  Apparently there is a substance in the package liners that can create an “uncharacteristic waxy-like taste and smell.”

Symptoms caused from eating the recalled cereals include diarrhea and nausea.

Approximately 28 million boxes of the recalled  products were distributed nationwide.

Chicken Breast Wrap – Perfect for Mother’s Day Lunch Menu

Thanks to Taste of  Home, I found a chicken breast wrap that will be perfect for a Mother’s Day lunch menu. With only five ingredients, it’s simple, fast and delicious.

Treat your Mom to a special Mother’s Day lunch with this easy wrap. With it’s unique Italian twist, the whole family will enjoy it!

Italian Chicken Wrap

6 Servings Prep/Total Time: 25 min.

Ingredients

  • 1 package (16 ounces) frozen stir-fry vegetable blend
  • 2 packages (6 ounces each) ready-to-use grilled chicken breast strips
  • 1/2 cup fat-free Italian salad dressing
  • 3 tablespoons shredded Parmesan cheese
  • 6 flour tortillas (8 inches), room temperature

Directions

  • In a large saucepan, cook vegetables according to package directions; drain. Stir in the chicken, salad dressing and cheese. Simmer, uncovered, for 3-4 minutes or until heated through. Spoon about 3/4 cup down the center of each tortilla; roll up tightly. Yield: 6 servings. 

Nutritional Analysis: 1 wrap equals 290 calories, 6 g fat (2 g saturated fat), 40 mg cholesterol, 1,129 mg sodium, 38 g carbohydrate, 3 g fiber, 20 g protein. Diabetic Exchanges: 2 lean meat, 2 vegetable, 1-1/2 starch.
