Blueberry Picture Perfect Muffins
Oranges are a little too soft but you hate to toss them out? Then make this Blueberry Picture Perfect Muffin recipe. Great way to use up those oranges!
1/2 cup of squeezed orange juice- about 3 oranges depending on size
1/2 cup rolled oats
1/2 cup vegetable oil
1 slightly beaten egg
1/2 cup sugar
1 1/2 cups of flour
1 1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup blueberries
Soak oats in orange juice
Sift together the dry ingredients
Add oil and egg to the orange juice and oats
Mix dry ingredients into the wet ingredients (do not beat)
Fold in the blueberries (If you use frozen berries, you do not need to thaw them. Mix about 1 tsp flour with the frozen berries before you fold them into the batter so they won’t stick together)
Fill greased muffin tins to 2/3 full
Top with a mixture of 3 tablespoons sugar and 1/2 teaspoon cinnamon
Bake in preheated 400 degree oven for about 20 minutes depending on oven
